I love these skinny chicken meatballs! They are so versatile and can be used in many ways. I have used them with low calorie marinara sauce and made a meatball sandwich with Sarah Lee 45 cal bread. I’ve used them to Make meatballs in red sauce over mushroom noodles or even eaten them plain along side cauliflower mash. THESE DO NOT DISAPPOINT! Yields 30 meatballs/ 6 servings (each meatball has about 52 calories)
1 pound ground chicken or turkey
1 egg
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan
2 tablespoons olive oil (optional – makes meatballs more moist and yummy)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
black pepper to taste
additional seasonings optional
Let’s start cooking……
• Preheat oven to 400 degrees
• Line baking sheet with foil and then lightly spray with cooking spray
• Mix all the ingredients in one bowl.
• Roll mixture into 30 meatballs
• Pop them in the oven and bake for 25-30 min.
Anddddd then you eat….. boom. Easy.
