Ground chicken Vietnamese lettuce wrap

I seen a version of this recipe on http://www.cookingforkeeps.com/bahn-mi-lettuce-wraps/ .

I changed the meat and some of the Ingredients a bit to fit my calorie limitations. I also completely got rid of their spicy sauce and found another one with fewer calories. I LOVED it. It was a light and refreshing lunch that I looked forward to eating. I precook a few meals and arrange them to eat through out the week. This allows me to meal prep and adjust things so I do not get tired of eating them. This recipe makes 6 wraps. I ate this ,either for lunch or dinner, 3 different days of my work week. If you love Vietnamese food then this is a MUST TRY!

Quick tip:

I used these store bought veggies and julienned them against the crinkle. My mother in laws pickled veggies are crinkled so I tried to emulate hers. Now lets begin!!!!!
