November 2018 I was at my heaviest weight and was desperate to loose it. I had yo-yo dieted many times and never was able to get significant weight loss. It seemed unattainable. I finally decided to visit my doctor to see if he had any suggestions. He put me on a 1,000 calorie diet. In the beginning I was miserable. I ate TV dinners, chicken, baked fish, and tasteless steamed veggies. The calories were leaving however I couldn’t even imagine the rest of my life not being able to enjoy food.
Food has always been a passion for me. I have always loved cooking and trying new and interesting foods. Not being able to do this completely depressed me. Cooking was my happy place. now I am limited to baking fish, grilling chicken, and warming up TV dinners……. or am I?
Eventually eating healthy was second nature. I learned what food I needed to eat and how I needed to space it out to stay satisfied. But how do I keep my love of cooking and food Alice? I decided to find low calorie recipes and adjust them to fit me.
Now I look forward to Sunday meal prep. I look forward to tasting my new foods whenever they are scheduled through out the week. I even look forward to the puzzle that is weekly meal planning. I changed the way i have thought of my diet. It’s now a fun challenge.
I have lost a little over 60 lbs. I feel great! I’m not as self conscious and find myself excited to go do things with my family in public. It has been a blessing.
I wanted to create this blog to keep my excitement about health going. I also wanted to share what I have learned and experienced with other woman who are in the same position as me. Please give me feedback on recipes and I hope you like it!
